Buying locally has been a longtime interest for Charles, who took sustainability courses when working in California. Now, years later, Charles and Martha continue to support the movement by being part of Portland Buy Local and buying locally as much as possible in order to support the local economy and serve the freshest, most flavorful food possible.

Maine Organic Farmers and Growers Association (MOFGA)
Organically, naturally raised food is better for the environment and better for people, and that’s why The Salt Exchange supports organic farming in Maine as a MOFGA member. Charles and Martha constantly seek new ways to incorporate organic practices into both their business and their lives, believing it’s a critical direction for the world and all industries.

It’s probably no surprise to hear that Charles and Martha are fans of museums. Members of both the Portland Children’s Museum and Portland Museum of Art, the couple feels it’s important to support places where individuals can go to learn, discover and grow.

Gulf of Maine Research Institute (GMRI)
The world is full of misconceptions, and in Maine a lot of them are about the fishing industry. Charlie and Martha work with the GMRI to help correct misconceptions surrounding the industry’s practices. Inspired by GMRI seminars, Charles, Martha and Chef Jaskinski have begun to expand The Salt Exchange’s seafood offerings, focusing on artfully prepared renditions of under-recognized Maine specialties.
